Ingredients for the Dough:
3/4 cup brown sugar
1 egg
1/2 cup of molasses or honey (we made them with molasses)
3 cups of all purpose flour
Instructions:
In a bowl add the butter (at room temperature) together with the brown sugar and beat on medium speed with the mixer until fluffy. Then, add the egg and molasses and mix with a whisk, until the ingredients blend in together. Then add the flour, baking powder, baking soda, ginger, cinnamon, cloves and salt. Mix with gentle movements, first with the whisk and then we will use our hands and knead the mixture until the flour is well mixed with all the ingredients and a pliable, buttery dough is created. Once the dough is ready, wrap it in cling film and let it rest and set for 30 minutes.
So, after 30 minutes, we place parchment paper on our counter to stretch our dough. Place parchment paper both below and above the dough. This way, the dough will stretch easily and it will not stick to the counter or rolling pin. So, place the parchment paper on the counter, sprinkle a little flour, place the dough on the parchment paper and cover again with another sheet of parchment paper. Stretch the dough with the help of a rolling pin to a thickness of 7-8 mm, cut the cookies with a cutter in different shapes and place them on a trace on top of parchment paper. Our cookies will swell slightly during baking, so we leave a little space between them so.
Bake in a preheated oven, at 180 degrees for 10-12 minutes. Once they turn reddish, remove them from the oven and leave them to cool to decorate them with the royal icing glaze!
