Banana Bread | Easy Recipe for the most delicious Banana Bread | Perfect to serve with tea or coffee
Sunday today, rainy weather in the city ... we enjoy our afternoon snuggly tea with the perfect snack! 🍌🍞 Banana bread, freshly baked and still hot from the oven smelling of cinnamon and cloves !! 🤗👌 Check out our favorite and very easy-to-follow recipe. We will enjoy this banana bread today with our tea but also tomorrow ... and the day after tomorrow for breakfast! If you have ripe bananas that would otherwise go to waste, now is the time to turn them into a wonderful banana bread!
Ingredients:
3 medium sized ripe bananas (or 2 big sized)
1/2 cup of brown sugar
1/2 cup of unsalted butter (room temperature)
2 eggs
1 cup of almond milk
2 tablespoons of tahini
2 cups of all purpose flour
2 teaspoons of baking powder
1 teaspoon of baking soda
1 κ.γ. vanillin
1 teaspoon of ground cinnamon
1/2 teaspoon of ginger powder
1/4 teaspoon of clove powder
1/4 teaspoon of cardamom powder
A pinch of Fleur de Sel (or salt)
40gr crushed Walnuts
40gr crushed almonds
(You can also add pecan or brazil nuts)
A few nuts or banana pieces for garnish

Instructions:
We will need a mixer and a bowl.
We start with the bananas. Add them to the bowl and mash them slightly. Add the butter and sugar and start beating, on medium speed. Then add the almond milk and the tahini and continue stirring for 1-2 minutes. Stop the mixer and add the flour, baking soda and baking powder, add in the spices (vanilla, cinnamon, ginger, clove and cardamom) and the salt (fleur de sel). Mix at low speed until the ingredients are homogenous. The last ingredient we add is the nuts (walnuts and almonds). Beat for a few more seconds and our mixture is ready!
Take a loaf tin and spread butter all over it. Add a little flour and make sure it sticks to the butter. We do this so that the mixture does not stick to the walls of the tin, and to make sure that it increases its volume beautifully during baking. We can also use parchment paper instead of butter-flour. Pour the mixture into the loaf tin and shake it slightly to spread the mixture evenly and avoid air bubbles. If you want, you can decorate the surface with nuts (we put walnuts) or with banana slices.
Bake in a preheated oven, at 170-180 degrees for 40-50 minutes (depending on the oven). Once out of the oven, we will have to wait a few minutes for it to cool, and then we will remove it from the loaf tin.
You can enjoy it hot or cold. Try spreading some hazelnut praline, if you are a chocolate lover, like us!🍫 Or you can add some chocolate drops to the mixture prior to baking. You can also have your banana bread slice topped with honey and fruit. It makes a great snack, ideal for breakfast or brunch. And it goes incredibly well with your coffee, tea or milk! 🥛☕️
