Fleur de Sel is french for Flower of Salt. It is a high quality unprocessed Natural Sea Salt from Messolonghi salt ponds, an area protected by the RAMSAR treaty, and is also part of the Natura network. "Afrina" is the local name for the Fleur de Sel in greek. Afrina comes from the word "afros" which means "foam". Fleur de Sel is the foam that is created on the surface of the ponds of Messolonghi, the first salt crust that is created as the sea slowly dries out.
It is a salt of the highest quality, its flakes are collected exclusively by hand by experienced workers of the family business Floros. Fleur de Sel is the season's first salt harvest, which as soon as it is completed, the harvest of regular salt begins.
Fleur de Sel is packaged without any processing, directly from the sea, it retains its moisture and its bright color in each crystal. It contains 96 minerals and trace elements. "Afrina" crystals are crunchy and have an extremely unique taste. Fleur de Sel is always served raw, so as not to lose its flavor and valuable ingredients through heat. We use it to garnish salads, bruschettas, fish, fillets, even desserts (salted caramel). We always sprinkle it at the end of the recipe as a garnish as overheating tends to damage it.
